Roasted Garlic

 When I roast garlic, I do an entire tray all at once. That way, I always have a good supply in the freezer when I want it. Your house will smell absolutely wonderful while the garlic is roasting.
Here's how:
1. Buy a bag of garlic from your local big box retailer, (Sam's or Costco).
2. You'll need extra virgin olive oil, kosher salt, and fresh ground pepper.
3. Lay each head on it's side and slice off the top.
4. Place all heads on a sheet tray.

5. Now drizzle the exposed cloves with extra virgin olive oil.

 
6. Sprinkle liberally with kosher salt and fresh cracked pepper.

7. Now, after you've prepped all the garlic, cover it up with foil.
            8. Bake in a 350 degree oven for 45 minutes. Uncover it, and roast for another 15 minutes. It should look like the picture below.

9. When cool, store whole heads in a gallon size ziplock bag, oil and all. When ready to use, take out a head and microwave it for 45 seconds. Squeeze the cloves out of the skins.
Now, you're ready to make garlic mashed potatoes, pesto, pasta sauce, bruschetta, really, almost anything, except maybe cupcakes..
